For parents everywhere it’s the most wonderful time of the year. Yes, it’s nearly time for the kids to return to school.

In a week or so the Sultanate’s mums can breathe a sigh of relief, albeit with the return of the school run’s dent in their daily diaries.

Still, there’s time to enjoy a bit of al fresco dining with the family in the evenings, and especially now that the weather is starting to cool down.

Everyone loves a barbecue or pizza and there’s something infinitely more pleasant about eating outside.

Why not round up the family and head to your backyard for some fun, food and family time before the school schedule kicks in?

With these handy recipe tips, your home-made pizzas will positively leap off the serving platter while your desserts will dance a tune to your kids’ taste buds.

Ditch the kitchen and get the whole family mucking in by making pizza. This deliciously easy Cheesy Flatbread Pizza recipe can be enjoyed by everyone.

Keep it simple for the kids with Borden Cheese’s Mild Cheddar Shreds or dress it up with some fresh vegetables.

For dessert, and the perfect end to the perfect day, look to some of nature’s best ingredients, such as fresh apples and honey. The fruity crisp recipe below is packed with flavour from juicy apples and boasts a delicate sweetness from honey that coats the fruit and gives the crumbly topping more bite.

Cheesy Flatbread Pizza

Cooking time: 25 minutes

Servings: 4


Ingredients


  • 1 piece (30cm) cracker bread or flatbread
  • 1 tablespoon olive oil, plus extra for brushing
  • 1 package (225g) Borden Cheese Mild Cheddar Shreds, divided
  • 8 strips thick-sliced turkey bacon, cooked crisp and broken into 2.5cm pieces
  • 4 whole garlic cloves, sliced
  • 4 plum tomatoes, sliced
  • 1/2 red onion, cut into strips
  • 1/4 cup chopped Italian parsley
  • fresh basil leaves (optional)

Method


  • Heat the oven to 200C.
  • Brush the bread with a small amount of olive oil and place on a baking sheet.
  • Spread 1 1/2 cups of cheese evenly around the bread. Top evenly with the turkey bacon pieces.
  • In a small frying pan over a medium heat, heat one tablespoon of olive oil until hot. Add the garlic, and saute until lightly browned. Sprinkle onto the pizza. Arrange the sliced tomatoes and red onions onto the pizza.
  • Add the parsley to the remaining cheese and spread over the ingredients.
  • Bake for 10 minutes or until the cheese has melted. Cut into squares and serve immediately. Garnish with fresh basil leaves, if desired.

Tip: For a different flavour, try grilling the pizza rather than baking it in the oven. Brush a raw side of dough with a little olive oil and grill until the bottom of the crust is golden-brown.


Apple Honey Crisp

Cooking time: 20 minutes

Servings: 6


Ingredients


  • 900g apples, quartered and sliced
  • 3/4 cup honey, divided
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup flour
  • 1/4 cup butter
  • Softened warm cream or ice cream

Method


  • Heat the oven to 175C.
  • In a bowl, toss the apples with the half-cup of honey, the cinnamon and the nutmeg. Turn and place into a 1.5 litre serving dish. To make the topping, beat the flour with butter and the remaining honey until crumbly. Sprinkle over the apples and bake for 40-45 minutes or until the apples are tender and the topping is golden. Serve with warm cream or ice cream.
